Indians used the tuber as a staple food and for long walks, because they appreciated the appetite-suppressing effect.


Recently the plant was "discovered" as a remedy for current health problems.
Topinambur is included under the Latin name Helianthus Tuberoses, in the list E of medicinal plants.


Instead of starch, i.e. Polymer-bound Glucose Glycaemic which do increase the index, it contains the carbohydrate Inulin in form of polymer-bound fructose. The carbohydrate Inulin has - in contrast to starch - retrieve the property after eating hardly insulin from the pancreas.


Inulin is insulin independent. Jerusalem artichoke is therefore recommended especially diabetics and overweight. Inulin protects against colon cancer as well.


In the intestine Microorganisms such as Lactobacilli and Bifid bacteria break down the Inulin by special enzymes into smaller Ooligo-Fructoses and organic acids. These bacteria use the Inulin as a nutrient for their own reproduction. This process is called “prebiotic”, meaning that the body's own bacteria system is strengthened and pathological bacteria growth is slowed down.


The degradation of Inulin lowers the acidity (pH) of the intestine. By that the absorption of minerals such as calcium, magnesium and iron is improved. Up to 20 % higher intake of calcium is a measurable osteoporosis prevention.


Topinabur tubers   contain many important    vitamins such as Carotene , B1 , B2 , B6 , C , D, Nicotinic Acid and Biotin.


It also has a high  potassium content ( 400-800 mg/100g)  and contains  numerous trace elements.
